Natural Pigment-- Water-soluble Curcumin

Curcumin was first isolated from turmeric Curcumalonga L. for the first time in 1870 from a low relative molecular mass polyphenol compound. In 1910, the chemical structure of its double feruloyl methane was clarified. The subsequent progress in the study of its physiological and pharmacological effects was made. With the further study of curcumin, it has been found that it has extensive pharmacological activities such as anti-inflammatory, antioxidant, lipid regulating, antiviral, anti infection, anti-tumor, anticoagulant, anti hepatic fibrosis, anti atherosclerosis and other pharmacological activities, with low toxicity and less adverse reactions. 

Curcumin is currently one of the largest natural food pigments in the world, which is the WHO and the US Food and Drug Administration and the food additives permitted to be used by many countries. To attract researchers not only is curcumin as a nonsteroidal anti-inflammatory drug, but because of its chemical prophylaxis, curcumin has a wide range of preventive properties for the disease. The antioxidation and anti-inflammatory effects of curcumin have attracted wide attention from scholars both at home and abroad because of the discovery of many diseases in modern medicine, which are related to the formation of free radicals and the involvement of inflammatory reactions.

Curcumin has been widely used as a common natural pigment in food industry for a long time. It is mainly used in tinned, enteric and sauce brine. The use of curcumin is determined according to the need of normal production. The product form of functional food with curcumin as the main component can be a general food, or a non - food form, such as capsules, pills or tablets. For general food, yellow foods such as cakes, sweets and beverages can be considered.
